TRU – Chicago

by Suha on July 9, 2011

Absolutely stunning!!!! TRU in downtown Chicago offers amazing progressive French cuisine. Fresh produce, imagination and perfect presentation. With a Michelin star to its name, Anthony Martin – the current executive chef won chef of the year in 2010 in Chicago as well. With so many great restaurants in Chicago it is hard to pick but I would not go past Tru. Every dish was beautifully presented, amazing flavours, great service and a great night. I would love to go back and try some of the other dishes.

The bread tray was irrestible. We got to try all of them.

P1060103

Cucumber salad on gelee, bouchot mussel veloute

P1060104

White sturgeon “caviar”, avocado, hazelnut – this was just so brilliant. White sturgeon fish and egg white made to look like caviar….the pears look just so beautiful. Hard to eat this dish as it looks so beautiful and you don’t want to disrupt it…

P1060105

Inside an English pea soup, lavender – Anthony’s version of the English pea soup but oh so different. The plate came with frozen pea puree reshaped to form a pea, lavender marshmallows, smoked bacon, brioche croutons and then they pour the hot pea soup at the table…..yum.

P1060107

Duroc pork belly, stone ground grits, pickled ramps

P1060111

Scottish salmon, Sorrel, smoked cream – even though the salmon with a dollop of smoked cream was great – it was the plate that made the dish!!!!! Gorgeous hand blown and hand painted green and turquoise glass plate….stunning presentation.

Glazed veal, fava been, morel mushrooms, tokyo turnip, prosciutto
